Surprise Baby

Guess who found the baby in the King Cake today????

Yep. I'll be hosting next year's Mardi Gras celebration!

I assembled today's breakfast using vanilla Oikos Greek yogurt as the base. I added in Quaker Oatmeal Squares, Iz granola, 1/2 sliced banana, blueberries, and Justin's chocolate almond butter. This is such an easy breakfast to throw together and totally satisfying!


Lunch was a big salad containing diced tomatoes, cucumbers, bell peppers, carrots, walnuts, a mix of dried cranberries and golden raisins, and broccoli salad drizzled with a little balsamic vinaigrette.

And a graham cracker using the last of my Justin's chocolate almond butter.


I ate a Golden Delicious apple and a handful of Quaker Oatmeal Squares as a snack, and I met Mary Alice for a late afternoon run around campus after class was over for the day. I mapped our run, and it came out to be about 3.5 miles. I picked up dinner at Newk's Cafe, a staple restaurant in my college diet. I got half of the chicken pesto sandwich with the tomato basil soup.


I'm watching The Bachelor: The Women Tell All right now. Should be dramatic! I foresee a few Dove dark chocolates with almonds and hot tea later in the night.

I have a pretty laid back week, so I can't complain. I will be staying here this time next week!

Rainy Day

We ate a late lunch yesterday at Callaghan's Irish Social Club, a local favorite. In the spirit of Mardi Gras, I ordered a Blue Moon (I really wanted a Lazy Magnolia Southern Pecan but they were out). They are known for their burgers, but I was really in the mood for seafood yesterday. I got the fish po' boy with blackened tilapia and a side of tomato cucumber salad. We started off with an appetizer of spinach artichoke dip and French bread.





It started raining pretty hard yesterday afternoon, so the parades were cancelled. We went to an IMAX movie called Lost Worlds. This wasn't the best I've ever seen, but the "nerdy science girl" in me does love a good IMAX movie! Afterwards, we stopped at a quaint coffee shop called Cream & Sugar. It was so cute inside, and they even had an oatmeal bar! It is my dream to open up a coffee shop/oatmeal bar, and I've never seen one in Alabama before. Needless to say, I got a little excited! I ordered a coffee and an Orange Dreamsicle cake ball. Yum!



 We ate dinner at Mary Alice's house and started off with some appetizers and red wine. Her parents are great hosts!

The main course was an awesome chicken and orzo pasta salad and some grapes. It was so fresh and would be the perfect picnic food!

We were pretty tired, so we stayed in and watched Secretariat. Disney always makes a good movie!

I woke up this morning to MA's dad's famous waffles topped with strawberries, blackberries, and maple syrup. And a good cup of coffee!

With all of the other delicious desserts, we didn't get to the King Cake! But, we are taking it back to school with us!

Mardi Gras in Mobtown

We made a pit stop at PieLab on the way down! It was such a neat place.

Mary Alice's mom had prepared a traditional Mardi Gras meal for us when we arrived at her house! After dinner, we headed downtown to watch the Crew of Columbus parade. I got lots of beads and moon pies! We hung out at the Garage and the Corner Bar after the parade. It was a fun first Mardi Gras experience.

PieLab

Good morning!

I just finished a bowl of Kashi Maple and Brown Sugar oatmeal, 1/2 C water, 1 T chia seeds, 1/2 sliced banana, blueberries, and crunchy Barney Butter. I ate my oatmeal with almonds yesterday, and I think I'm always happier when a little nut butter is involved!



I'm about to go for a run, finish packing, and go to class. Then, I'm off to Mobile!

We're stopping at PieLab on the way down! It's located in the Black Belt of Alabama, which includes some of the poorest counties in Alabama and even the United States. The idea behind PieLab was born when a group of graphic designers gave away free pies to pedestrians in Belfast, Maine and saw the impact this had on bringing people together. They moved to the Black Belt with the intent of uniting and strengthening the community of Hale County, AL and eventually starting a sustainable, locally-operated business. PieLab's main mission now is to provide jobs and job training to citizens of Hale County.

PieLab has received national press, and it was featured in the campus newspaper this week. I can't wait to try it out!

Food, Inc.

Have you ever really thought about where the food you’re eating comes from? Most of the time we just put whatever is sitting in front of us into our mouths without a second thought. The food industry knows what consumers want and is working to make a profit at the expense of our health. Have you ever noticed the way a grocery store is designed? You usually have to work harder to find healthy foods. Produce, dairy, meat, and grains are usually located on the perimeter of the grocery store. The center aisles are filled with convenience foods-chips, cookies, crackers, etc. Healthy cereals are usually located on the top shelf, which it makes them harder to find. Sugary cereals are located right at eye level for easy access. In addition, candy and chips are available at the check out counter as a last minute item. Food, Inc. set out to expose the tactics the food industry uses to control our food intake. Many issues (foodborne illness, factory farming, genetic engineering, pesticides, cloning, environment, global food crisis) were discussed in this film, but I will just touch on a few.



The Facts:
On average, there are about 47,000 products in the supermarket.
McDonald’s operates on the basis of uniformity, conformity, and cheapness.
McDonald’s is the largest purchaser of ground beef and potatoes, and they are changing the way it’s being produced.
There are a handful of companies controlling our food system.
Tyson is the biggest meatpacking company.
Birds are now being raised and slaughtered in half the time and are twice as big. Chickens are being redesigned to have larger breasts, because consumers like all white meat. The bones and internal organs cannot keep up with the chickens’ rapid growth.
The average person consumes 200 lbs. of meat per year.
The average food product travels about 1,500 miles to get to your local grocery store. This accounts for 30,800 tons of greenhouse gas emissions every year.
1/3 of children or adolescents are overweight or obese. Type 2 diabetes, hypertension, and high cholesterol are now being seen in children.
The food industry is blaming the obesity epidemic on us as consumers for irresponsible eating habits.

So, what does this mean to us?
Am I telling everyone that they should never eat meat again and should only purchase organic food? Of course not. What I am saying is that we should know where our food is coming from. Be aware of how the food industry is changing the way the food we eat is produced and marketing “unhealthy foods.” I support sustainable agriculture and believe it is beneficial to eat locally grown organic food whenever possible. I suggest shopping at Farmer’s Markets in your community, because it supports the local economy and it's cheaper!  However, I realize that this is not always realistic. Organic food can be expensive and many people may have limited access depending on their location. For example, if someone had the choice between a bag of Dorito’s or a non-organic apple, would I really tell that person to not eat the apple because it isn’t organic? No way! Obviously, an apple has way more nutritional benefits than a bag of chips. It’s all about making small steps in the right direction.
I also think you should know what you are eating. In my opinion, all restaurants should be required to provide nutritional information and all food items should be labeled with nutrition facts. It’s important to know what you are putting into your body. Even seemingly healthy options can contain more calories, fat, and sodium than you would realize!

Bottom line: Stay informed! Be aware of the food industry’s marketing strategies, and don’t let them trick you into spending more money and consuming more calories. Take care of your body and eat food that is real food! Locate Farmer's Markets near you!

Smooth Sailing

I woke up early this morning to study for my math test, and I pulled out an A! There's just nothing like a bowl of oatmeal to start off my day. I seriously look forward to breakfast every morning:) Today's mix was Kashi Maple and Brown Sugar, 1/2 C skim milk, 1 T chia seeds, a small sliced banana, blueberries, and Justin's Chocolate AB. I'm sadly approaching the end of the AB jar. This stuff is so good!


I went to my usual classes and came back for lunch at the sorority house. Chicken salad is still the main ingredient in my lunch today, but I used a tortilla to make it into a wrap (I need a new lunch tomorrow). And a mix of cantaloupe, honeydew, and grapes on the side! I also ate a few Millet & Flax Cinnamon Chips for dessert.

Today was another workout at the gym. I ate a Kashi Cherry Dark Chocolate bar for a snack, and did 45 minutes on the arc trainer, 15 minutes on the bike, and finished up with stretching and abs.
Dinner tonight was chicken coated with saltine crackers, rice pilaf, a mix of colorful veggies (green beans, squash, broccoli, and red bell peppers), and a roll. I went back for another helping of veggies!


I decided it had been way too long since I've had frozen yogurt, so I went on a TCBY outing with Laura and Rebekah. I know I can always count on them to accompany me to TCBY:) I mixed white chocolate mousse, peanut butter, and red velvet yogurt together and topped it off with Reese's, granola, and coconut. It was the perfect ending to my night!


I have an Italian midterm tomorrow, but I am finished with tests, quizzes, and projects until Spring Break! 

Current Song Obsession: Poison & Wine by The Civil Wars. It's been on repeat all day!

Procrastination

Be especially good to yourself this month, because March is National Nutrition Month!

My morning started out with a bowl of Kashi Maple and Brown Sugar oatmeal, 1/2 C skim milk, 1 T chia seeds, a sliced banana, and a spoonful of Barney Butter.


Lunch was yet again another chicken salad salad! Just a warning: it's on the menu again tomorrow, so you'll probably be seeing it again.


My after lunch dessert was another "S'more."Today was a gym day. 35 minutes on the elliptical and 25 on the bike. I finished up with stretching and abs. I made a trip to Publix in between classes to pick up a few necessities: Oikos Greek yogurt, Quaker Oatmeal Squares, bananas, and blueberries (they were on sale, and I couldn't resist)! I ate a Pink Lady and a handful of almonds for my afternoon snack and headed to photography class. I finished up my project today!

 I don't have a picture of dinner, but it was Sante Fe soup (loaded with kidney beans, black beans, and corn) and Mexican Cornbread. It was good! I just got back from Campus Crusade for Christ and made a bedtime snack. Strawberry Oikos Greek yogurt, blueberries, and Iz granola. I'm also sipping caffeine-free peppermint tea.


True Life: I have senioritis and have significantly improved my procrastination skills this semester. I have a math test tomorrow, so I should probably look over my notes at some point tonight.

Last night I watched Food, Inc, an eye-opening documentary about the American food industry. I will be posting my review later on this week/weekend when I have time to gather my thoughts.
